New Sensorial Dining Experience, Tapping All Senses Offered at Grand Velas Riviera Nayarit

Riviera Nayarit, Mexico (June 24, 2019) - Even the most discerning palates will be awakened by the new "Sensorial Dining" experience at Grand Velas Riviera Nayarit. Featuring five courses that tap into the body's five senses - sight, hearing, smell, taste and touch - the culinary experience is truly a feast for the senses. Each course is also paired with an alcoholic beverage to complement the flavors of the dish.

The first course, "Metamorphosis," highlights the sense of sight with a visually stunning presentation. A purple cabbage and duck confit ravioli soup changes vibrant color instantly with the introduction of lemon juice served in a pipette. The second course, "The Echo of the Sea," places the local seafood center stage and encourages guests to tune into their sense of hearing. Raw fish will be placed on top of hot stones, and water poured on top to sizzle and steam. The dish is then covered with a glass cloche and the fish cooks inside, alongside aromatics like garlic, ginger and chive.

 

"Aromas from the Meadows," the third course, leans on the diner's sense of smell. Succulent prime rib is served on a bed of hay, vine wood and rosemary, which is then set on fire and served in a closed cocotte. When the guest lifts the lid of the cocotte, the aromas fill the air. Dessert, which is called "Multi-Flavored Delicacy," highlights the sense most associated with eating: taste. Sweet mango mousse is filled with tart chamoy. Served alongside is tamarind sponge cake topped with Campari and lemon sauce. All are associated with the four basic flavors: sweet, salty, bitter and acidic. To complete the meal, the "Sensation of Symphony" course encourages guests to get hands-on with their food, as they are served three different truffles - one marshmallow, one chocolate with hazelnuts, and one flavored with yuzu - meant to be eaten by hand.

 

The Sensorial Dining experience costs $450 per person and must be booked in advance.
